    Step-by-Step Method

    1. Prep the Canvas

    Preheat your oven to 150°C (130°C fan-forced). Trace a 20 cm circle onto three sheets of parchment paper using a dark pencil, then flip the paper over onto your baking sheets so graphite doesn’t transfer to the food.

    2. Whip the Meringue Matrix

    Wipe your stand mixer bowl with a paper towel dipped in vinegar to remove residual oils. Add the 180g egg whites, cream of tartar, and a pinch of salt. Whisk on medium speed until the whites transform from clear liquid into a foamy white cloud with soft peaks.

    Begin adding the 330g caster sugar one tablespoon at a time, allowing roughly 20–30 seconds between additions. This gradual pace takes about 15 minutes and ensures every crystal dissolves. Turn the speed to high for the final 5 minutes until the meringue forms stiff, glossy peaks. Rub a dab between your thumb and index finger; it should feel silky-smooth. Gently fold in the cornflour mixed with the reserved tablespoon of sugar, followed by the white vinegar.

    3. Shape the Discs

    Divide the meringue equally across the three prepared trays. Using an offset palette knife, spread each portion out to fill the 20 cm template, keeping the surface flat and the perimeter clean.
