Whenever Swedish friends gather for midsummer, birthdays, confirmations, or milestone anniversaries, one centerpiece commands the table above all else: Smörgåstårta. Translating literally to “sandwich cake,” this savory triumph is an art form disguised as party food. If you have never experienced it, imagine the finest elements of classic tea sandwiches, vibrant cold-smoked seafood, and whipped savory mousses assembled into a multi-layered, beautifully frosted cake.

My first encounter with smörgåstårta occurred at a friend’s midsummer celebration outside Stockholm. Seeing what looked like an elaborate tiered celebration cake adorned with piped herbs, ribbons of smoked salmon, plump cold-water shrimp, and delicate cucumber fans—only to discover it was savory, rich, and zesty—instantly changed how I view party entertaining. This tested recipe lightens the traditional heavy-mayonnaise base by introducing tangy Greek yogurt, building three distinct, complementary layers of crisp vegetables, mustard-laced smoked salmon, and a classic egg-and-shrimp salad.

    Planning & Kitchen Logistics

Building a sandwich cake is an assembly project rather than an active baking task. You will spend roughly 45 to 50 minutes trimming, blending fillings, and layering, followed by an essential resting phase. Because there is zero oven time, this is an approachable recipe for beginners who want high-impact visual results without baking stress.

This recipe yields 6 to 8 generous party portions. Because smörgåstårta is rich and satisfying, modest rectangular slices easily satiate your guests. If you are hosting a larger gathering, do not try to build a taller tower; instead, assemble two separate cakes side by side or double the footprint using a larger rectangular platter.

    • Essential Equipment: A long serrated bread knife (critical for clean bread trimming), an offset spatula for smoothing the outer savory frosting, and a flat, rimless serving platter or cake board.
    • Clever Substitutes: If you do not own an offset spatula, the flat back of an icing spatula or a wide butter knife works smoothly. A sturdy wooden cutting board lined with parchment paper makes an ideal serving base.
    • Make-Ahead Strategy: Smörgåstårta tastes best when made in two distinct stages. Assemble the bread layers, fillings, and outer crumb-coat cream 12 to 24 hours in advance, then wrap the cake loosely and refrigerate it overnight. This rest allows the bread to absorb moisture and soften into a sliceable, cohesive cake. Add the delicate garnishes (herbs, fresh seafood, roe, and citrus) during the final 1 to 2 hours before serving so everything stays crisp, vibrant, and fresh.

    Key Ingredients & Preparation

    Smörgåstårta Assembly & Layers
    Foundation Base
Base Cream: Mayo (1 cup) + Greek Yogurt (2 cups) + Salt & White Pepper
Layer 1 Asparagus, Fennel, Arugula, Dill
Layer 2 Smoked Salmon, Squeezed Cucumber, Dijon
    Layer 3 Hard-Boiled Eggs, Hand-Peeled Shrimp, Horseradish
    Exterior Frosting
Cover Cream: Reserved Base Cream + Cream Cheese (7 oz) + Grated Horseradish

The foundation of every balanced smörgåstårta is its binder. We build a single Master Base Cream and divide it equally into four bowls: three for the internal fillings and one for the exterior cover frosting.

    • Mayonnaise & Greek Yogurt: Classic recipes rely heavily on heavy mayonnaise and sour cream. Using whole-milk Greek yogurt alongside rich mayonnaise provides structural body with a crisp, lactic acidity that keeps the seafood tasting clean. Use full-fat, unsweetened Greek yogurt to avoid watery runoff.
    • Bread (18 slices): Choose a firm, evenly sliced sandwich loaf—white, whole grain, or dark sourdough rye. Avoid excessively airy, hole-filled artisan loaves; tight-crumbed square loaves hold moisture without collapsing into mush.
    • Crisp Produce (Asparagus, Fennel, Arugula, Dill): Raw or lightly blanched cold asparagus stems and shaved fennel bulb bring refreshing crunch against soft bread. Arugula adds peppery backbone, while fresh dill delivers signature Scandinavian aromatics.
    • Smoked or Cured Salmon (Gravlax): Opt for cold-smoked salmon with a smooth, glossy sheen. Finely dice the salmon for the internal filling so every bite cuts cleanly with a fork, reserving broader, flexible ribbons for top garnish.
    • Cucumber: English or Persian cucumbers work best. Grate coarsely and aggressively wring the shreds out in a clean tea towel to extract excess water.
    • Shrimp & Hard-Boiled Eggs: Small, cold-water, hand-peeled shrimp (Pandalus borealis) offer sweet flavor and tender bite. Hard-boil eggs until firm (9–10 minutes), shock them in ice water, and dice them finely once completely cooled.
    • Prepared Horseradish & Dijon: Freshly grated or jarred prepared horseradish adds heat that cuts through the cream cheese frosting, while a touch of Dijon provides gentle acidity.

    Step-by-Step Method

    1. Blend the Master Base Cream

In a large mixing bowl, whisk together the mayonnaise and Greek yogurt until silky, glossy, and uniform. Season gently with fine sea salt and finely ground white pepper (white pepper keeps the sauce looking clean and pale). Divide the mixture evenly into four separate bowls, leaving one quarter in the primary bowl.

    2. Formulate the Cream Cheese Frosting

Take the reserved base cream in your primary bowl and beat in the softened cream cheese and 1 to 2 teaspoons of grated horseradish. Whisk vigorously until no lumps remain and the frosting holds soft peaks. Cover and refrigerate until assembly.

    Prepare Swedish Sandwich Cake

    3. Mix Filling #1 (Green Crunch Layer)

Finely chop the cooled asparagus tips and stalks, shaved fennel, arugula, and fresh dill. Fold the vegetables directly into the first portion of base cream. Taste and adjust seasoning; the mixture should taste bright, fresh, and slightly herbal.

    4. Mix Filling #2 (Salmon & Cucumber Layer)

Grate the cucumber coarsely, place it into a cheesecloth or clean dish towel, and twist firmly over the sink to squeeze out all excess moisture. Finely dice the smoked salmon. Fold the dried cucumber, diced salmon, and Dijon mustard into the second bowl of base cream.

    5. Mix Filling #3 (Shrimp & Egg Salad Layer)

Chop the cold hard-boiled eggs and chilled shrimp into medium-fine pieces. Fold them into the third bowl of base cream along with 1 to 2 teaspoons of grated horseradish. Taste for seasoning and add an extra pinch of white pepper if needed.

    6. Trim and Arrange the Bread Foundation

Using a sharp serrated knife, slice the crusts off all 18 bread slices, keeping the edges straight and square. Cut 6 of the trimmed slices cleanly in half to create 12 half-slices. Place 3 whole slices end-to-end on your serving platter to form a long rectangle, then place 3 half-slices alongside them to widen the base. Press the edges tightly together.

    7. Build and Stagger the Layers

    • First Tier: Spread Filling #1 evenly over the bread foundation right to the edges using an offset spatula.
    • Second Tier: Lay down your second bread layer in a staggered, brickwork pattern—place the whole slices over where the half-slices were on the tier below, and vice versa. This seam-overlapping technique locks the cake together so it will not split when sliced. Spread Filling #2 smoothly over the surface.
    • Third Tier: Stagger the third layer of bread slices identically to your first layer. Spread Filling #3 across the top.
    • Final Top: Crown the cake with the remaining bread slices, staggered like the second layer.

    8. Frost and Chill

Retrieve the chilled cream cheese cover frosting. Apply a thin layer across the sides and top of the cake, sealing in crumbs and locking in moisture. Smooth the surfaces with an offset spatula. Cover loosely with plastic wrap (taking care not to press down) and chill in the refrigerator for at least 6 hours, or ideally overnight.

    9. Garnish and Unveil

One to two hours before serving, arrange your decorative toppings over the frosted top and sides. Layer folded ribbons of smoked salmon, clusters of pink shrimp, thinly sliced lemon wheels, crisp asparagus spears, bright spoonfuls of red fish roe (stenbitsrom or salmon roe), fresh dill sprigs, and pea shoots pressed gently along the lower perimeter.

    Serve Swedish Sandwich Cake

    Variations & Customization

    • Dairy-Free Adaptation: Substitute the mayonnaise for an egg-free or avocado-oil mayo, swap the Greek yogurt for an unsweetened plain almond-milk or coconut-milk yogurt alternative, and use a plant-based block cream cheese for the outer frosting.
    • Gluten-Free Option: Use sturdy, gluten-free sandwich loaves with a tight crumb structure. Toast the slices lightly on a wire rack and let them cool completely before assembly to reinforce structural stability.
    • Smoky Meat Variation (Skinktårta): Replace the seafood with finely diced smoked ham, crispy crumbled bacon, grated sharp cheddar cheese, and chives for an earthier, pub-style celebration cake.
    • Vegetarian Garden Cake: Omit seafood and build layers with marinated artichoke hearts, grated roasted beets, shredded radishes, diced sun-dried tomatoes, and crumbled goat cheese.

    Serving, Slicing & Storage

Present smörgåstårta whole at the center of the buffet table so guests can admire the exterior design before slicing. Use a sharp, thin-bladed chef’s knife or slicing knife wiped clean between cuts to carve 1-inch thick cross-sections.

    • Accompaniments: Pair with crisp dry Riesling, sparkling prosecco, chilled pilsner, or crisp mineral water with lemon. Fresh, peppery mixed greens lightly dressed in lemon juice provide an ideal acidic counterpoint.
    • Refrigeration: Store leftover cake in a sealed container or tented with foil for up to 2 days. While the bread remains moist and tasty, the seafood and fresh herbs are best enjoyed within 48 hours.
    • Freezing: Do not freeze smörgåstårta. The high dairy content, mayonnaise, fresh greens, and cucumber will separate and become watery upon thawing.

    • 2 cups (500 ml) plain full-fat Greek yogurt
    • ½ tsp fine salt
    • ¼ tsp ground white pepper
    • 7 oz (200 g) cream cheese, softened
    • 2–3 tsp prepared horseradish, divided

    Bread Foundation:

    • 18 slices firm white or whole-grain sandwich bread, crusts removed (6 cut in half)

    Layer 1 (Vegetable):

    • 3.5 oz (100 g) asparagus, tender parts finely diced
    • ½ fennel bulb, finely minced
    • 1 cup fresh arugula, chopped
    • 2 tbsp fresh dill, minced

    Layer 2 (Salmon & Cucumber):

    • 4.5 oz (125 g) cold-smoked salmon, finely diced
    • ⅓ English cucumber, coarsely grated and squeezed completely dry
    • 1 tsp Dijon mustard

    Layer 3 (Shrimp & Egg):

    • 3 hard-boiled eggs, cooled and finely chopped
    • 5.3 oz (150 g) cooked peeled shrimp, chopped

    Garnishes (To Taste):

    • 3.5 oz (100 g) whole peeled cold-water shrimp
    • 3.5 oz (100 g) smoked salmon slices
    • 3–4 cooked asparagus tips
    • 6 tsp red fish roe (stenbitsrom)
    • Fresh dill sprigs, pea shoots, and thin lemon wheels

    Instructions

    1. Make Base Cream: Whisk mayonnaise, Greek yogurt, salt, and white pepper in a large bowl. Divide into four equal portions across separate bowls.
    2. Make Outer Frosting: Whisk softened cream cheese and 1–2 tsp horseradish into one portion of the base cream until completely smooth. Set aside in the refrigerator.
    3. Mix Fillings: Fold the chopped asparagus, fennel, arugula, and dill into the first filling bowl. Fold the squeezed cucumber, diced salmon, and Dijon into the second bowl. Fold the chopped eggs, shrimp, and 1 tsp horseradish into the third bowl.
    4. Assemble Foundation: Place 3 whole trimmed bread slices and 3 half-slices side by side on a flat board to form a wide rectangle. Spread Filling 1 over the bread.
    5. Stagger Layers: Add a second layer of bread slices, alternating the whole and half slices to create a staggered brickwork pattern. Spread Filling 2 across the surface. Repeat the alternating pattern with the third layer of bread and spread Filling 3. Top with the final layer of staggered bread slices.
    6. Frost and Rest: Coat the top and sides of the cake with the reserved cream cheese frosting using an offset spatula. Cover loosely with plastic wrap and chill for at least 6 hours (or overnight).
    7. Decorate & Serve: Within 2 hours of serving, decorate the top with salmon ribbons, whole shrimp, lemon slices, fish roe, asparagus tips, and fresh herbs. Slice with a sharp chef’s knife.

    Notes

    • Prevent Sogginess: Wring all moisture out of the grated cucumber in a clean dish towel before mixing.
    • Make-Ahead Advantage: Always assemble the cake 12–24 hours ahead; resting allows the bread layers to soften uniformly for clean slicing.
    • Storage: Keep refrigerated; consume leftovers within 48 hours for optimal texture and freshness.
