Instructions

Step 1: Prep & Mix Dry Base

  1. Preheat your oven to 350°F (175°C).
  2. Lightly spray a 9×13-inch metal pan with nonstick spray and line the bottom with parchment paper.
  3. In a large bowl, whisk the flour, cocoa powder, white sugar, brown sugar, baking powder, baking soda, and salt together until no clumps remain.

Step 2: Add Wet Ingredients

  1. Make a well in the center of the dry ingredients.
  2. Pour in the milk, vegetable oil, room-temperature eggs, and vanilla extract.
  3. Whisk gently just until the flour disappears into a thick, glossy batter. Do not overmix!

Step 3: Bloom the Cocoa

  1. Pour the hot water (or hot coffee) directly into the batter.
