  • 3 tsp baking powder

  • 2 large eggs (room temperature)
  • 1 cup fat-free milk
  • 2 tbsp butter (melted and cooled slightly)

  • 3 tbsp fresh chives (finely minced)

Instructions

  1. Prep the Oven & Pan: Heat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or spray wells thoroughly with nonstick cooking spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, and salt for 30 seconds to aerate.
  3. Whisk Wet Ingredients: In a separate medium bowl, whisk the eggs, milk, and slightly cooled melted butter until smooth.
  4. Combine Gently: Pour the wet mixture into the dry ingredients. Use a rubber spatula to fold just until the flour disappears. Do not overmix! A few lumps are totally fine.
  5. Fold in Flavor: Gently fold in the crumbled feta cheese and minced chives with 4 or 5 light sweeps.
  6. Bake: Spoon batter evenly into the 12 muffin cups (about ⅔ full). Bake at 400°F for 18 to 22 minutes, or until the tops spring back and a toothpick inserted in the center comes out clean.
  7. Cool: Rest muffins in the pan for 5 minutes, then transfer to a wire cooling rack.
