Ingredients

For the Cake Batter

Instructions

Cream the Base

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch or 9-inch square pan with butter and dust lightly with flour.
  2. In a mixer bowl, beat the softened butter and granulated sugar on medium-high for 3 minutes until pale and fluffy.
  3. Turn the speed low and pour in the vanilla, fresh lemon juice, and eggs (one at a time). Mix just until combined.(Note: It might look slightly curdled from the citrus—don’t panic, it smooths out later!)

Build the Batter

  1. Whisk the 1 cup flour and baking powder together in a separate bowl.
  2. Alternate adding the dry mix and sour cream into the wet batter, starting and ending with flour. Mix strictly until the flour streaks disappear.
  3. Gently fold in your whole cranberries with a rubber spatula. Spread the thick batter evenly into your prepared square pan.

Top and Bake

  1. Combine the streusel flour, brown sugar, and melted butter in a small bowl. Toss with a fork until coarse, buttery crumbs form.
  2. Scatter the crumbs evenly over the entire top of the batter.
  3. Bake on the center rack for 42 to 46 minutes. The cake is done when the top is golden and a toothpick inserted in the center comes out clean.
