Muffin Batter

  • 280g (2 cups) all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 pinch fine salt
  • 2 large eggs, room temperature
  • 150g (3/4 cup) granulated sugar
  • 180g (3/4 cup) whole milk, room temperature
  • 115g (1/2 cup) unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract

Cinnamon Sugar Crust

  • 50g (1/4 cup) granulated sugar
  • 1 1/2 tsp ground cinnamon
  • 28g (2 tbsp) unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with standard paper liners.
  2. In a large bowl, whisk together the flour, baking powder, ground cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk eggs and sugar for 20 seconds until blended. Whisk in the melted butter, room-temperature milk, and vanilla.
  4. Pour the wet ingredients into the dry bowl. Fold with a spatula until just combined; do not overmix.
  5. Divide batter evenly across the 12 muffin cups (approx. 3 tablespoons each).
  6. Bake at 375°F (190°C) for 14 minutes, or until a tester inserted in the center comes out clean. Rest muffins in the pan for 5 minutes.
  7. Whisk 50g sugar and 1 1/2 tsp cinnamon in a small bowl. Place 28g melted butter in another shallow dish.
  8. Dip the warm crown of each muffin into the melted butter, then coat generously in the cinnamon sugar mixture.

Notes

  • Prevent Dense Muffins: Stop stirring as soon as dry flour disappears. Lumpy batter yields tall, fluffy muffins.
  • Temperature Check: Ensure milk and eggs are at room temperature so melted butter does not seize upon contact.
  • Storage: Keep in an airtight container with a paper towel at room temperature for up to 3 days. Reheat in a 300°F (150°C) oven for 3 minutes to recrisp the sugar shell.
