¼ cup quick-cooking oats
1 tbsp brown sugar
1 tbsp unsalted butter, melted
¼ tsp ground cinnamon
Muffin Batter:
1 ½ cups quick-cooking oats
1 ½ cups all-purpose flour
½ cup packed brown sugar
1 ½ tsp ground cinnamon
1 tsp baking powder
½ tsp baking soda
½ tsp fine salt
½ cup unsweetened applesauce
½ cup whole milk (room temperature)
¼ cup vegetable oil
1 large egg (lightly beaten, room temperature)
1 tsp pure vanilla extract
1 medium baking apple (peeled, cored, and finely chopped)
Instructions
Preheat & Prep: Heat oven to 400°F (200°C). Line a 12-well muffin tin with paper liners or spray thoroughly with nonstick baking spray.
Make Topping: Stir together the topping oats, brown sugar, melted butter, and cinnamon in a small dish until crumbly. Set aside.
Whisk Dry: In a large bowl, whisk the oats, flour, brown sugar, cinnamon, baking powder, baking soda, and salt until evenly combined.
Mix Wet: In a separate bowl, whisk together the applesauce, milk, vegetable oil, beaten egg, and vanilla until smooth and emulsified.
Combine: Pour the wet ingredients into the dry bowl. Stir with a spatula just until moistened (do not overmix). Gently fold in the chopped apple.
Portion & Top: Divide batter evenly across the 12 prepared cups (about ⅔ full). Sprinkle the oat topping evenly over each muffin.
Bake & Cool: Bake at 400°F (200°C) for 14–16 minutes until a toothpick inserted in the center comes out clean. Cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
Apple Choice: Use crisp, firm apples like Honeycrisp or Granny Smith so they don’t break down into mush.
Batter Tip: Stop mixing as soon as dry flour streaks vanish to keep the crumb light and tender.
Storage: Keep in an airtight container lined with paper towels at room temperature for up to 3 days, or freeze wrapped in plastic for up to 3 months.
