  • 1 1/2 cups Caster Sugar
  • 1 cup Plain Yogurt
  • 1 cup Vegetable Oil
  • 3 tablespoons Earl Grey loose leaf tea (or tea from 3 tea bags)
  • 2 tablespoons vanilla essence (or 12 teaspoons vanilla extract)
  • 100g Dark Chocolate, roughly chopped (optional)
  • 2 cups Self Raising Flour
  • Finely grated zest of 1 Orange
  • Raw or Brown Sugar, for sprinkling

Instructions

  1. Get Ready: Preheat your oven to 160°C (320°F). Lightly grease a 21 x 13 x 6cm loaf pan and line it with baking paper, leaving a little overhang for easy lifting.
  2. Mix the Wet Ingredients: In a bowl, whisk the eggs and caster sugar together until they’re pale and fluffy. Stir in the plain yogurt, vanilla, orange zest, and Earl Grey tea leaves until just combined. Then, gradually whisk in the vegetable oil.
  3. Combine with Dry: Add the self-raising flour and the optional chopped dark chocolate to the bowl. Gently fold everything together with a spatula until just combined – be careful not to overmix!
  4. Bake to Perfection: Pour the batter into your prepared loaf pan and smooth the top. Give the pan a gentle tap on the counter to release any air bubbles. Sprinkle generously with raw or brown sugar. Bake for about 1 hour, turning the pan halfway through (after 30 minutes), or until a skewer inserted into the center comes out clean.
  5. Cool Down: Let the cake cool in the pan for 15 minutes before using the baking paper overhang to lift it out. Transfer to a wire rack to cool completely.
