Whip up these irresistible chewy brownie bites! Perfectly rich and fudgy, baked in a mini muffin tin for the ultimate bite-sized chocolate treat. A simple recipe for a guaranteed crowd-pleaser that’s ready in under 30 minutes.

Ingredients

  • ▢ Cooking spray or mini muffin liners
  • ▢ ½ cup unsalted butter, softened (1 stick)
  • ▢ 1 cup granulated sugar
  • ▢ 2 large eggs
  • ▢ 2 tsp vanilla extract
  • ▢ ½ cup all-purpose flour
  • ▢ ½ cup unsweetened cocoa powder
  • ▢ ½ tsp baking powder
  • ▢ ¼ tsp salt
  • ▢ 1 cup dark chocolate chips
  • ▢ ¼ tsp flaky sea salt (optional, for topping)

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (180°C). Generously spray or line a 24-cup mini muffin tin.
  2. Cream Butter & Sugar: In a large bowl, use a hand mixer on high speed to beat the softened butter and granulated sugar until well-combined and fluffy (about 2-3 minutes).
  3. Add Wet Ingredients: Add the eggs and vanilla extract. Mix on low speed just until combined.
  4. Add Dry Ingredients: Add the flour, cocoa powder, baking powder, and salt to the bowl. Mix again on low speed until just combined – don’t overmix! Use a spatula to scrape down the sides if needed.
  5. Fold in Chocolate: Gently fold the dark chocolate chips into the batter.
  6. Fill Tin: Fill each mini muffin cup about ¾ full with batter. A small cookie scoop works great here!
  7. Bake: Bake on the top oven rack for 15-17 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs.
  8. Cool & Finish: Let the brownie bites cool completely in the muffin tin before carefully removing them. If desired, sprinkle with flaky sea salt while they’re still slightly warm. Enjoy!
