Egg Mixture

  • 10 large eggs
  • ½ cup milk or cream (cream for richness, milk for a lighter option)
  • Salt and pepper to taste

Fillings

  • 1 cup shredded cheddar cheese (or Swiss, mozzarella, or Gouda)
  • ½ cup chopped vegetables (e.g., bell peppers, onions, tomatoes, spinach)
  • ½ cup cooked crumbled bacon or sausage (optional)
  • ½ cup chopped turkey (optional for lean protein)

Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C). Grease a 12-cavity muffin tin generously with non-stick spray or butter to prevent sticking.
  2. Prepare the Fillings
    Chop vegetables into small pieces and pre-cook bacon or sausage until crispy. Shred cheese if not pre-shredded.
  3. Mix the Eggs
    In a medium bowl, whisk together eggs, milk/cream, salt, and pepper until smooth and slightly frothy.
  4. Assemble the Egg Bites
    Divide the chopped vegetables, meats, and cheese evenly among the muffin tin cavities. Pour the egg mixture over the fillings, filling each cavity about ¾ full. Stir gently with a fork to distribute the fillings evenly.
  5. Bake
    Place the muffin tin on the center rack of your oven. Bake for 12–18 minutes, checking at the 12-minute mark. The egg bites are done when they’re set in the center and slightly golden on top.
  6. Cool and Serve
    Let the egg bites cool in the pan for 5 minutes before removing them with a butter knife or spatula. Serve warm or store for later.
