  • ½ bag tater tots, cooked and crumbled (or homemade hash browns)
  • 2 tablespoons butter
  • 1 tablespoon jalapeño, finely diced (optional)
  • ½ cup yellow or white onion, diced
  • 2 cloves garlic, minced
  • ½ cup mozzarella cheese, shredded
  • 4 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease four ramekins with non-stick spray or butter.
  2. Sauté Veggies: In a small skillet over medium heat, melt butter. Add diced onion and jalapeño; cook for 3–5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  3. Assemble Ramekins: Divide crumbled tater tots evenly among the ramekins, pressing them down firmly to form a base. Layer the sautéed vegetables on top, followed by shredded mozzarella cheese. Make a small indent in the cheese layer for the egg.
  4. Add Eggs: Crack one egg into each ramekin and season with salt and pepper. Be careful not to break the yolk!
  5. Bake & Broil: Place ramekins on a baking sheet for stability. Bake for 5 minutes, then broil on high for another 5–6 minutes until eggs are set to your liking (runny or firm yolks).
  6. Cool & Serve: Let the ramekins rest for 5 minutes before serving—they’ll be hot! Enjoy directly from the ramekin or gently loosen and plate.
